Add the oil to the pan and cook over medium heat for 10 minutes.
Remove from heat and place the ginger and honey in a bowl.
Add coconut oil to a medium heat and cook for about 5 minutes.
Add a bit of salt and pepper, stir, and remove from heat.
Return the ginger mixture to the bowl, and add in the honey and spices.
Stir to combine and return to the heat for another minute.
Add in the soy sauce and stir to combine.
Cover the bowl with a lid, and cook the eggs for about 30 minutes, stirring occasionally, until the eggs are cooked through.
Remove the lid and allow to cool.
Add about 1 tbsp of the reserved honey to the skillet, and stir.
Add another tbsp of soy sauce to the soy mixture, and allow it to thicken a bit.
Serve hot, garnished with chopped parsley, and serve with a side of avocado slices and fresh mint.
